Following hours of playing with the values, I soon found myself with ini files which were all over the place and the game was starting to struggle on my non-spectacular hardware, so I went vanilla, updated the 4Gb enabler and worked through this guide:
The results were the best I'd seen without hitting performance. Ambient occlusion, the usual fps-killer made little impact on the hardware but added a huge amount, especially to buildings.

That's enough tweaking for me. Seems I've found the stable level for my machine but I'll test it properly after work. Hope so, as I can no longer use my original ini files as the new saves don't work with them. Hence no screenshot comparison.
Runs at around 60fps. Graphics look like this:
Moved my Skyrim folder to my SSD. Ran the Large Address Aware patch. Changed FOV to 85 in console. The .ini files I'm using are here. These are for reference only. ANY CHANGES YOU MAKE TO YOURS ARE AT YOUR OWN RISK. Back up your originals. On Win7 the files are in the C:\Users\[username]\Documents\My Games\Skyrim folder or equivalent.
I'm not familiar with what half the variables do, so if anything I've done sticks out as dumb, please let me know.
Tested on:
Intel Core i7 2600K o/c 4.8Ghz
ASUSTeK Computer INC. P8P67 PRO
16GB Mushkin Redline DDR3 2133MHz 9-11-10-28
OCZ Vertex 3 SATA3 120GB
2x NVIDIA GeForce GTX 560Ti SLi
Samsung 24" SMB2430H 1920x1080
Windows 7 64bit

I've been playing with the .ini files again. Huge results visually, but stability becomes an issue and frame rates are all over the place. I'll be changing my .ini settings back for general play, but for screenshots this is the way forward. Huge thanks to Duncan Harris (@deadendthrills)
Read his guide here before you do anything: http://deadendthrills.com/2011/11/madness-in-the-method/ Have a look at his shots here: http://www.deadendthrills.com/
Here is a comparison to show the results I achieved. Click each image for original 1920x1080 screens. The difference is quite striking.

What can I say? Lovely stuff. Looks incredible. Tiny glitches here and there, but just look at the scope of the thing. IT'S HUGE. The sense of freedom is astonishing. Sounds fantastic, too. Seriously. The soundtrack is glorious.
Also, it's taken over my life...
Battlefield 3. Very Pretty.

After many months of build-up, Battlefield 3 has arrived, and it's phenomenal. Until it crashes... I'm a sucker for smoke and lighting effects. In my day it was a black screen with some squares jolting about on it. etc. etc.
I have managed a satisfactory fix, but it involves disabling SLi (which I'm getting pretty disillusioned with).
If you also have 560Ti in Sli, this worked for me.
[edit]It didn't. Took me until 6th December to work it out, but my workaround is here[/edit]
